A major belief of mine when it comes to food is that it does not have to be extravagant to be delicious. Anyone can make something elegant without having to buy a hundred ingredients and having their kitchen be chaotic. This zucchini tart is a perfect example. The most work you have to do is make sure it doesn’t burn in the oven.
The best part? It doesn’t have to be a zucchini tart if you don’t want it to be. You can swap it for tomatoes, asparagus, mushrooms, I’ve done all of those. Can’t find puff pastry? Use those rolls of pie crust you can find in the refrigerated dough section. Not down with Boursin? (inconceivable in my mind but I guess there’s someone out there who isn’t) You can use any spreadable cheese you do like. I’ve done a spicy whipped feta before and it was great.
I’m not here to preach about perfect and exact recipes, I don’t care for that. The beautiful part about cooking is that you can pivot and create something entirely your own with just a few guidelines to get you started. That’s what you’ll find here more often than not. Cooking can be compared to music, learn the basic notes and once you get the hang of that you can just riff and find your own unique melody.
Boursin and Zucchini Tart
1 roll of puff pastry
1 zucchini sliced thinly
1 boursin cheese
olive oil and salt to top
Have the boursin at room temperature to spread more easily.
Roll out puff pastry into a baking dish or onto parchment paper on a sheet pan if you want it free formed. Spread cheese into a base layer, leaving the edges to create a crust if you aren’t using a baking a dish. Lay the zucchini on top of the base. There can be some overlap but try to keep it that its one layer so while its cooking they can get a little crisp. Top with a drizzle of olive oil and some salt. Of course you can always add more herbs to the top. When I make it with tomatoes I add oregano and some chopped garlic. Do you babes, whatever flavors you want to taste. Bake at 400 for about 25-30 minutes or until the zucchini and the pastry have become golden brown.
